Il convient de noter que la s\u00e9lection de cette ann\u00e9e comprend deux nouveaux restaurants r\u00e9compens\u00e9s d\u2019une \u00e9toile MICHELIN.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Emelina <\/strong>\u00e0 West Palm Beach et <strong>Mutra <\/strong>\u00e0 Miami, ces deux \u00e9tablissements ont fait leur entr\u00e9e dans le guide avec une \u00e9toile MICHELIN. Par ailleurs, <strong>Fat Beet Farm : cuisine et boulangerie-p\u00e2tisserie<\/strong> \u00e0 Tampa s'est vu d\u00e9cerner une \u00ab Green Star \u00bb pour son r\u00f4le de pionnier dans le domaine de la gastronomie consciente. C\u2019est un lieu intimiste, dot\u00e9 de 16 places au comptoir face \u00e0 une cuisine ouverte, mais ce sont surtout leur regard perspicace et leur savoir-faire culinaire qui conf\u00e8rent \u00e0 l\u2019exp\u00e9rience un caract\u00e8re profond\u00e9ment personnel. La plupart des ingr\u00e9dients proviennent du sud de la Floride, ce qui permet de raconter une histoire unique. Les hu\u00eetres Sebastian Silver poch\u00e9es, accompagn\u00e9es d\u2019une mousse de yucca et d\u2019une poudre de champignons, t\u00e9moignent d\u2019un grand raffinement, tandis que les tomates cerises de Redland marin\u00e9es, servies avec un chimichurri \u00e0 l\u2019origan cubain et une mousse de lait de macadamia de Floride, montrent \u00e0 quel point des ingr\u00e9dients simples peuvent briller. Le b\u0153uf de Floride, vieilli \u00e0 sec pendant 45 jours, est accompagn\u00e9 d\u2019une sauce mojo \u00e0 la mangue verte inoubliable et d\u2019une sauce cubaine aux haricots noirs, tandis que le \u00ab rabo encendido \u00bb, une version r\u00e9invent\u00e9e du rago\u00fbt de queue de b\u0153uf classique, se distingue particuli\u00e8rement.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mutra (Miami ; cuisine du Moyen-Orient)<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Le chef isra\u00e9lien Raz Shabtai propose aux gastronomes de la ville ensoleill\u00e9e de Miami sa vision de la cuisine classique du Moyen-Orient. Nomm\u00e9 en l\u2019honneur de sa grand-m\u00e8re, cet \u00e9tablissement est un lieu incontournable o\u00f9 il faut absolument s\u2019assurer une place au vaste comptoir du chef. La carte est r\u00e9solument locale et change r\u00e9guli\u00e8rement ; ne soyez donc pas surpris si certains plats sont en rupture de stock. Mais n\u2019ayez crainte : l\u2019excellent personnel vous aidera \u00e0 d\u00e9couvrir votre nouveau plat pr\u00e9f\u00e9r\u00e9. Parmi les plats remarquables, on retiendra notamment une assiette de betteraves spectaculaire, aux saveurs terreuses et cuites \u00e0 la perfection dans un bain d\u2019ajo blanco, le tout surmont\u00e9 d\u2019un superbe sorbet \u00e0 la betterave et d\u2019un crumble aux amandes. Le kebab d\u2019agneau signature, accompagn\u00e9 d\u2019une cr\u00e8me d\u2019aubergines fum\u00e9es et d\u2019huile de tomate, est un pur r\u00e9confort, tout comme le poulet \u00e0 la tunisienne, juteux et savoureux, servi avec un rago\u00fbt de tomates et de pois chiches parsem\u00e9 de harissa, ainsi qu\u2019un couscous parmi les plus l\u00e9gers, moelleux et bien assaisonn\u00e9s de ce c\u00f4t\u00e9-ci de Marrakech. Le muhallebi, un pudding cr\u00e9meux au lait du Moyen-Orient agr\u00e9ment\u00e9 d\u2019eau de rose aromatique, d\u2019un crumble au tahini et de pistaches, constitue une conclusion sucr\u00e9e et satisfaisante.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Un nouveau restaurant mis \u00e0 l'honneur pour sa vision inspirante<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fat Beet Farm : cuisine et boulangerie-p\u00e2tisserie <\/strong>(Tampa) se distingue par le Green Star pour sa vision inspirante et engag\u00e9e de l'avenir de la gastronomie.
