You’ll find playful twists on classics and unique use of traditional southern ingredients that highlight the restaurant’s roots. Maxwell’s Plum, Wellington

It’s Iconic New York City meets Palm Beach at the new Maxwell’s Plum in Wellington. The owner, Jenny Oz LeRoy, is the daughter to Kay and Warner Leroy who owned and operated NYC’s Tavern on the Green, The Russian Tea Room, and the original Maxwell’s Plum. The beautiful new Wellington hot spot is a fresh take on the legendary 60’s bar, with a familiar spirit. What to order: Speaking of spirit, the drinks by beverage director Christian Hartmann don’t disappoint. Both your taste buds and your camera will be pleased with the ‘Prince’s Pear’, a delicate blend of pear and elderflower shaken with fresh pineapple and topped with prosecco then presented in a pear-esque bulb with smoked rosemary.

Eau Palm Beach, Manalapan

Polpo, the Eau Palm Beach Resort’s new signature restaurant, created by acclaimed Greenwich, Connecticut-based restauranteur Ron Rosa and helmed by Eau Palm Beach’s Executive Chef Neall Bailey, transports guests to Rosa’s native Calabria, Italy through regional seafood dishes, and an Italian-influenced beverage program. What to order: Take a scenic trip to Italy with Polpo’s Barrel Aged Strawberry Negroni. Polpo infuses strawberries with Prescribed barrel aged gin for four weeks then batch equal parts of Campari, Carpano Antica vermouth, and gin. Placed in a keg, it is served on draft over a large ice cube and a classic orange peel. Insta perfect!

Sweetwater, Boynton Beach

Born from desire to bring the cocktail scene to Palm Beach, Sweetwater has been a stanchion of style and spirits for years. The bar hosts the largest selection of spirits in the South East, and crafts seasonal tipples nightly.
