Q&A With a Chef: Jason Van Bomel of 1000 NORTH

To celebrate the first-ever Palm Beaches Restaurant Week, taking place Aug. 16-31, we’re asking some of the region’s top chefs about their inspirations, the local culinary scene and more.

Located at 1000 North U.S. Highway 1 in Jupiter, the name 1000 NORTH is fitting for this sophisticated waterfront restaurant featuring a Modern American menu with an emphasis on seafood and steaks. Diners can enjoy oysters on the terrace overlooking the Loxahatchee River or an aged cut in the stunning dining room, which features curved wooden beams rounding out the high ceiling and framing the towering glass wine wall.

1000 NORTH made waves even before its 2018 opening with its heavy-hitter partners including the likes of Ernie Els and Michael Jordan alongside managing partners Ira Fenton and Tucker Frederickson. The restaurant houses a members-only club with private access to a second-floor lounge and amenities reserved for members.   Jason Van Bomel is executive chef at 1000 NORTH. He began his time at the restaurant as sous chef before being promoted to chef de cuisine. But his culinary background goes back decades with a resume spanning the globe from Australia to London. We asked Chef Van Bomel a few questions to get to know him and 1000 NORTH a little better.

What made you decide to become a chef?

I never planned to be a chef. I started washing dishes as a part-time job and worked my way up to doing prep in the kitchen and working the line. When I was working in London, back in the early 2000s, I started reading a lot of cookbooks — every day. The more I read, the more passionate I grew about increasing my skills and knowledge as a chef. Cooking is something I grew to love.

What inspires you in the kitchen?

I want to create a memorable experience for every guest who walks through the door.

What is your favorite dish on the menu/to prepare?

The rock shrimp & lobster “Hoppin’ John” risotto is our version of a Southern classic peas and rice dish, which is representative of our cuisine. The combination of smoky bacon in the sofrito, mixed with the shellfish, makes it one of our bestselling dishes.

What’s one thing you would love for people to know about your restaurant?

At 1000 NORTH, we put a lot of enthusiasm and thought into every dish. It begins with an idea, then we source the best products, and our team takes pride in seeing the final product come to life.

What should people know about the culinary scene in The Palm Beaches?

It continues to grow and evolve as more great chefs emerge and new restaurants open. It makes for an exciting and thriving food scene with a personality all its own.

What would you tell a first-time visitor to do while they’re here?

Ask a local where their favorite food spots are, and don’t be afraid to explore outside of the “recommended” places to eat. Seek out restaurants that source and prepare dishes from local farms and suppliers.

Ready to Visit?

1000 NORTH is open Monday and Tuesday from 5 to 9 p.m., Wednesday and Thursday from noon to 9 p.m., Friday and Saturday from noon to 10 p.m., and Sundays from 11 a.m. to 9 p.m. The restaurant features a variety of dining areas including The Tavern lounge area centered by a beautiful bar, the main dining room and outdoor terrace. In addition to the restaurant’s lunch, dinner and weekend brunch menus, The Tavern features its own menu. Patrons can also select from a lengthy curated wine list and craft cocktail offering.

The restaurant is accessible by car with valet parking available. There are also boat slips for those choosing to arrive by water. While boaters are welcome, the dress code is relaxed but not necessarily casual; items like tank tops and flips flops are not recommended.   The Palm Beaches Restaurant Week takes place Aug. 16-31, 2021.
